Hollow opens in Delhi

Delicious potatoes rendered in duck fat, mushrooms simmered in thyme, rosemary, crispy onion, scallions and yuzu, a roast pork sandwich with fennel, anchovy, gochujang, provolone, braised greens, marinated hot peppers and a yuzu aioli, are just a few of the small plates on the menu at the recently opened Hollow cocktail bar and restaurant in Delhi, New York.

The sign is subtle. The door, which is located on Division Street off of Main Street, is almost easy to miss. But once you step inside, you will find a treasure trove of carefully crafted cocktails and delicious bites to accompany them. Hollow is a labor of love, put together by the married pair of Jake and Eden. She’ll be behind the bar cheerfully shaking your tequila or mezcal margarita while Jake slides behind the wall of the open kitchen to produce the small plates of genius.

The drinks are perfectly blended with a small assortment of signature cocktails that impress you so much you realize that the drinks may be the primary stars of the menus, each plate of food feels like it was created to accompany them.  If cocktails are not your thing, Hollow has you covered with a wide selection of beer, wine and spirits.

 

The space is atmospheric with dim lights and dark walls, but with all the comfort of a local bar. It seems like the perfect place for a date or a group of friends, while at the same time being equally perfect for a dinner or drink on your own.

Hollow is open Thursdays through Saturdays from 4:00 pm to 10:00 pm and 2:00 pm to 8:00 pm on Sundays. Reservations are not accepted, it’s first come, first serve.
